Restaurant Sous Chef
A special occasion calls for great food!  As a Restaurant Sous Chef with Fairmont Hotels and Resorts you will lead a team of culinary professionals in creating spectacular dishes that will create memorable dining experiences for our Guests. Your experience in managing various aspects of a kitchen will be reflective in positive Guest satisfaction and Colleague engagement results.

Located in the heart of vibrant downtown Winnipeg, Manitoba -- at the historic corner of Portage and Main -- Fairmont Winnipeg luxury hotel extends the naturally warm reception of the Prairies. Just step outside our Winnipeg hotel and the city is at your feet.

 

Summary of Responsibilities:
Reporting to the Executive Chef & Executive Sous Chef , responsibilities and essential job functions include but are not limited to the following: 

  • Promotes Health & Safety in the workplace and ensures all local health regulations are met. Ensure staff is trained to the highest standard of Food Safety.

  • Promote and be an example of Fairmont Values; Respect, Integrity, Teamwork & Empowerment. Build a department that takes pride in these values.

  • Ensure all Culinary & Stewarding staff conducts their daily duties in accordance with the Company Service Plus Standards. Be active in promoting Service Promise and its philosophies throughout the Hotel.

  • Ensure compliance in all Fairmont Hotels & Resorts F&B Standards and train all Outlet Culinary staff to standards.

  • Ensure that Culinary staff are trained and knowledgeable on Menu Item worksheets with accurate ingredient lists, preparation methods and pictures for all menu items. Ensure accurate food costing of each menu item is maintained and recorded. 

  • Take ownership of the Outlet kitchen menu creation process & create dynamic, trend setting menus for Velvet Glove, Lounge & In Room Dining that are cost effective, ‘authentically local’ and reflective of guests needs (know your guest.) Analyze and adjust menus in accordance with F&B Standards.

  • Ensure that proper food rotation practices are in place food wastage is minimized.

  • Liase with Executive Sous Chef to ensure schedules are meeting productivity guidelines and proper coverage for meal periods as assured. 

  • Communicate in a timely manner with the Executive Sous Chef any special order items for the Outlets. Assist with monthly Inventory Cycle. 

  • Drive Guest Satisfaction Index scores and VOG (Voice of the Guest) results through hands on involvement in the Outlet Kitchen to ensure the highest standard of food is being served. Be dedicated to a process of continuous improvement with effective communication of positive and negative feedback from Guests.

  • Actively manage all aspects of the Colleague experience through proper training, standards setting, performance management, communication and recognition to achieve positive results in the Colleague Engagement Index.

  • Ensure the Outlet Kitchen is clean and organized. Ensure Food Hygiene and Safety practices are of exceptionally high standard. Coordinate with Chief Steward and the Chief Engineer any maintenance of equipment needs and cleanliness issues that arise.

  • Communicate to the Executive Sous Chef the need for operating equipment for the Outlet Kitchen department and identify any Capital items to the Executive Chef. 

  • Work closely with Outlet Managers & Catering Managers to plan for smooth operations and event execution in the Outlets. 

  • Liaise with the Executive Sous Chef & Banquet Sous Chef to ensure the smooth operation of the entire Culinary department including the Outlet kitchen.

  • Support and promote the programs and activities of the entire Hotel’s Committees. (Service Promise, H&S, Enviro.)

  • Support and promote the programs of the Environmental Committee in its efforts toward environmental sustainability in the hotel and in the kitchen.

  • The Restaurant Chef along with the Executive Chef will be the main drivers in maintaining and promoting our own Roof Top Garden and Bee Hives, this will include educational demonstrations of our sustainable approach to urban gardening and honey production and incorporating the same methods into the menu.


 

 
 

Qualifications:

  • Ideal candidate will have 5-8 years progressive, diversified experience with in a 4 Diamond Hotel property. Experience in a 4 Diamond Restaurant is an asset.

  • Must possess an InterProvincial Red Seal Certificate.

  • Computer literate with excellent written and verbal communication skills.

  • An energetic team player able to multi task successfully. Must be highly organized and enjoy handling a dynamic, multi outlet kitchen.

Physical Aspects of Position (include but are not limited to): 


  • Constant standing and walking throughout shift

  • Frequent lifting and carrying up to 30 lbs

  • Occasional kneeling, pushing, pulling, lifting

  • Occasional ascending or descending ladders, stairs and ramps
